Handmade Pinecone Jam with Edible Pinecones
Did you know that some types of pinecones are fully edible, especially tender baby pinecones? These unexpected pine forest delicacies have a slightly sweet, woodsy, citrusy, and resinous flavor that can also be made into jams like this cool new Pinecone Jam with Edible Pinecones from Mom Cooks Jam.
This unique jam is handmade in small batches by slow-cooking cane sugar, water, and edible young green pinecones hand-foraged in the forests of western Ukraine during a brief 2-week season. It can be used as a spread on toast, biscuits, and other baked goods, a filling in pastries, a glaze on roasted meats, a pairing on cheese platters or charcuterie boards, or just stir it into cocktails, yogurt, or tea. It can also be used as a soothing natural remedy for coughs and sore throats, just like a spoonful of honey.
It never occurred to me that I would one day want to eat a pinecone, but I guess today's the day. Aren't you curious too? I think this would also make a cool gourmet gift, especially to a foodie.
