How does that freezing beer trick in the video work?

Hey, so from what i know, it's a matter of energy. When a liquid is cooled down rapidly it's molecules do not always have the energy needed to change state to a solid. This means it requires some type of energy input to change the state. In this case that would be the tap on the table. The other cases i have heard of are when a lake is cooled quickly because of weather, and it takes either a paddle or a thrown stone to break the surface tension, the ripples then turning to ice. Quite a neat bit of nature.
