When you grill flatbreads and seafood on a flat griddle stone over a hot fire, you are cooking alla piastra, a traditional Italian method of cooking. This classic technique can now used at home on your BBQ with the cool new Mario Batali Granite Piastra.

I received one of these stones for Fathers day. I was very excited to try it out. I picked up some filet mignon and lobster tails. What better way to initiate the "stone". Both were done to perfection. Very memorable father's day. Then a few days later, I was going to cook some prawns on it. As I was cleaning it off, I noticed a small crack in the stone. I had prepped it as the instructions said so I was pretty sure it wasn't due to mis-handling. I cooked the prawns and they came out perfect. After the stone had cooled over night, I decided to give it a good cleaning. I removed it from the bbq and was going to wash it when it just broke in half where the crack was. I cleaned it up and returned it to the store where my wife had purchased it. I was given another stone and again prepared it per instructions. I cooked on it three times before it cracked again.
I really like the way food tastes cooked on it, however there seems to be an inherant flaw in the stone. I am going to return the stone again and try to find a different manufacturer.

I went through 3 of these. I had the same problem. I went to my local marble/ granite guy and had a custom one cut from 1 1/4" unfinished granite. It is very big and heavy but has not cracked after many uses. The Batali one is junk. The marble guy charged me $50.

Are you saying that any unfinished granite of the thickness you specified will take the place of a grill stone. We purchased the original Grill"nStone and had the same results, cracking after a few uses. I'm game and guess I should try one. Lots of granite places around this part of Florida. The grill stone does offer advantages to cooking.Thank you for your suggestion.

I've had the same experience with my stone although it lasted about a year. The crack appeared 6 months ago and it took the next 6 months for it to fail completely. I have used it on both a gas grill and a charcoal grill.
