<description>Add some potatoes and you have yourself a Spanish omelette, better known as as tortilla Espanol.  http://www.spanishstuff.co.uk/tortilla.htm  My mother-in-law makes them with just the potato and onion, but we like to add ham to ours. This pan is great and would be wonderful for flipping the tortillas, but so far I&amp;amp;#039;ve only been able to find it at Williams Sonoma.  Even the Calphalon website doesn&amp;amp;#039;t list it.
