La Caja China Roasting Box

The cool new La Caja China really isn't new. This unique roasting box was originally brought to Cuba in the 1850s by Chinese workers working on the railroads and have been used throughout the Caribbean ever since to perfectly roast pigs, turkeys, chicken, lobsters, ribs, pork shoulders and more in nearly half the time with very minimal effort. The hot coals stay on top of the box while whatever you want to roast is cooked inside with high heat. The end result is crispy, juicy and deliciously authentic. The only real downside is finding enough hungry friends and family to justify cook this much mouth-watering food, but that shouldn't be too much of a problem.   • 60 lbs Goat - 3 hours
  • 18 Chickens - 2 hours
  • 80 lb Lamb - 3 hours
