I love omelets, but I cannot make them. I seem to be simply incapable of cooking the eggs and folding them or flipping them over. So I usually just make what is called a Frittata - a mixture of eggs, vegetables and meats all mixed together. I went out in search of a solution and discovered the Calphalon One Nonstick Frittata Pan ($135). This pan is basically two pans, one on top of the other, which allows you to easily cook one side of the egg and then do a quick flip to cook the other. So throw out your spatulas and make perfect omelets and frittatas with the superior quality of Calphalon One and its excellent nonstick surface. - Comments: 2( 2)

Add some potatoes and you have yourself a Spanish omelette, better known as as tortilla Espanol. http://www.spanishstuff.co.uk/tortilla.htm My mother-in-law makes them with just the potato and onion, but we like to add ham to ours. This pan is great and would be wonderful for flipping the tortillas, but so far I've only been able to find it at Williams Sonoma. Even the Calphalon website doesn't list it. I too am incapable of folding over an omelette!

so..how do you cook the fritattas with this? do they come out more moist than when cooked in an oven?
